Cocoa Krispies Footballs

Football Friday Tailgate Recipes: Football Shaped Treats Part Two

Ingredients:

  • 4 tablespoons butter
  • 1 (10-ounce) bag miniature marshmallows
  • 1 tablespoon cocoa powder
  • 5 to 6 cups chocolate puffed rice cereal
  • Cooking spray, for your hands
  • White store-bought frosting, for decorating

Directions:

  • 1. Melt the butter in a large pot over medium heat. Add the marshmallows and cook, stirring, until melted about 3 minutes. Stir in the cocoa powder. Add the cereal, folding until evenly coated.
  • 2. Remove the pot from the heat; let cool slightly. When cool enough to handle, generously spray your hands with cooking spray and shape the cereal mixture into footballs. Transfer to a wax paper-lined surface to set, about 5 minutes.
  • 3. Put a scoop of frosting in a small resealable plastic bag; snip a very small piece from the corner and pipe the laces onto the football.

Game Day Chocolate Chip Cheesecake Ball

Ingredients:

  • 8 oz cream cheese, softened
  • 1/2 cup butter
  • 1/4 tsp Vanilla Extract
  • 3/4 cup Powdered Sugar
  • 2 TB Brown Sugar
  • 1 package mini chocolate chips
  • a small handful of white chocolate chips
  • graham crackers vanilla wafers, and pretzels for serving

Instructions:

  • Beat cream cheese, butter, and vanilla in a medium-sized bowl until fluffy. Add sugar and beat until combined. Stir in 3/4 cup mini chocolate chips. Cover and refrigerate for two hours.
  • If making a football-shaped cheesecake ball, line the inside of the bowl of your choice with plastic wrap then fill with mixture. Cover the top with plastic wrap. If you are not using a bowl, simply place the mixture on a large piece of plastic wrap and shape it into a ball. Refrigerate for a least an hour.
  • To decorate and serve, remove the plastic wrap from the top of the bowl and invert the cheesecake ball onto the serving platter. Remove remaining plastic wrap. If you are not using a bowl, remove plastic wrap and serve as a ball, or use your hands to make it into a football shape.
  • Decorate by covering the cheesecake ball with remaining mini chocolate chips. To add accents to resemble “football laces”, add white chocolate chips to the center and topsides.
  • Serve with graham crackers, vanilla wafers, and pretzels

Touchdown Brownies

Ingredients:

  • 1box (1 lb 6.25 oz) brownie mix
  • 1/4cup water
  • 1/2cup vegetable oil
  • 2eggs
  • White decorating icing (from 4.25-oz tube)

Instructions:

  • Heat oven to 350°F (325°F for dark or nonstick pan). Line 13×9-inch pan with foil, letting foil hang 2 inches over sides of the pan. Grease bottom only of foil with shortening or cooking spray.
  • In a medium bowl, stir brownie mix, chocolate syrup, oil, water, and eggs until well blended. Spread in pan.
  • Bake 28 to 30 minutes or until a toothpick inserted 2 inches from the side of the pan comes out almost clean. Cool completely, about 1 1/2 hours.
  • Using foil to lift, remove brownies from the pan. With a 3 1/2×2 inches football-shaped cookie cutter, cut brownies into football shapes. Pipe on decorating icing to look like football laces.
  • No football cookie cutter? You can use a knife. Just cut the brownies into 12 rectangles (4 rows by 3 rows). Trim the corners of each rectangle to make a football shape. For smaller footballs, cut brownies into 2×1-inch rectangles and trim them to make football shapes.

I am going to make this as easy as possible. Instead of icing the cupcakes as a whole cake, I am going to have you ice each individual cupcake and arrange it in the shape of a football then add the lace details after the cupcakes are arranged.  If you prefer more frosting arrange the cupcakes then ice the whole thing and add the laces details.

  • Bake cupcakes– Chocolate cupcakes are always a good choice.
  • Let them cool- Until room temperature.
  • Ice the cupcakes – any canned chocolate flavor you like
  • Arrange them- In the shape of a football.
  • Pipe football stripes – With white icing.
  • Use mini cupcakes- The number of cupcakes needed to create the correct shape would obviously be more but the same instructions will apply. Also, the baking time for mini cupcakes is shorter.
  • Use a big tray or cake board- This will allow you to have enough space to create the correct arrangement and it also makes it easy to move the tray around during the party, if necessary.
  • Make sure your icing is not too thick nor too thin- Because if it’s thick, it will be hard to pipe and if it’s thin, it will be too runny to create a proper design.
  • Make sure cupcakes cool fully before decorating- Because if you don’t do this, the heat will melt the icing and make a sticky mess.
  • Refrigerate– Leftovers can be stored in a sealed container for up to 3 days.
  • Freeze- Unfrosted cupcakes and frosting can be frozen separately in sealed containers. When you are ready to enjoy them, let them thaw overnight in the fridge and then, follow the decorating instructions below.
  • Room temperature– Decorated cupcakes can be stored in a cardboard box for up to 24 hours as long as there is no perishable filling.
  • Make ahead instructions- These cupcakes can be baked and decorated 1 day in advance and stored in the fridge or room temperature until you are ready to serve.
