Cilantro Lime Flank Steak
Ingredients
2-3 lb Flank Steak
1 bunch of cilantro
15 cloves of peeled garlic
1c lime juice
1/2c olive oil
1/3 c kosher salt
3 tbsp black pepper
Recipe
- Cut off roots of cilantro and discard.
- Rinse cilantro under cold running water for 1 minute to ensure there is no grit or sand left in the cilantro
- Roll cilantro in paper towel and let dry for at least 5 minutes
- Remove the cilantro from paper towel and cut the entire bunch into thirds. Including the stem.
- Add all ingredients into a blender and puree on medium high until smooth.
- Place flank steak into a large zip lock bag and pour the cilantro lime marinade into the bag.
- Seal the zip lock bag, ensuring to get as much air out of the bag as possible.
- This will help the marinade make better contact with the flank steak
- Ensure the cilantro lime marinade is covering the flank steak on all sides of the meat.
- Put marinated flank steak into the fridge for 2-12 hours.
- The longer the flank steak sits in the marinade the more intense the flavour will be.
- After the 2-12 hour marinating, remove flank steak from the zip lock bag and gently wipe off any excess marinade, if you’d like a stronger flavour leave more of the marinade on the meat.
Cooking instructions
- Heat your propane or charcoal grill to 425f
- Place steak on to the grill and don’t touch the steak for at least 3-4 minutes. By not moving your flank steak it will help ensure better grills marks on your steak
- Cook the flank steak for another 6-8 minutes then flip, remembering not to move the steak once it has been flipped.
- Once flipped, cook the flank steak for another 6-8 minutes
- If you have a thermometer check your steak after it’s been flipped and cooked for 6-8 minutes. Aim for an internal temperature of 130f for medium rare you would like your steak cooked more look for 140f for medium, 150f for a medium well and 160f for well done
- I suggest enjoying flank steak between medium rare and medium.
- Once the flank steak has reached your desired temperature, remove from your grill and let the steak rest for 10-15 minutes
- Resting will help maintain the steaks natural juices and keep your steak moist
- Slice your flank steak and enjoy
