Football Friday Tailgate Recipe: Alabama Crackers

Happy Football Friday we are now 29 days away from the kickoff of the 2021 college football season. It’s the perfect time to start collecting some tried and true tailgate recipes.  It is week FOUR of Football Friday Tailgate Recipe. Did you save the recipe for week three  Wayne’s Tortellini Salad?  This week’s recipe was sent to me by April Perry McWhirter.  She married into a Crimson Tide family hence the Alabama Crackers.  Y’all enjoy.

Alabama Crackers aka Bacon and Brown Sugar Crackers

These crackers are addictive. Who doesn’t love the sweet and salty? Definitely, do not skimp on the brown sugar also add some Chili powder or Cayenne pepper for a cracker with a sweet kick.

The Recipe:

What you need

  • 1 Box of Club Butter Crackers or Town House Crackers
  • 4 Tablespoons of brown sugar
  • Chili powder or Cayenne pepper
  • 1 pound of bacon – regular sliced bacon. If you use thick-cut bacon, it will take longer to get crispy and the edges of the crackers might burn.
  • Rimmed Sheet Pan lined with foil

Directions:

  • First, wrap the bacon around the cracker sprinkle with brown sugar and chili powder.
  • Second, place the crackers on the cooling rack with the bacon ends facing down. This will help to keep the bacon from unraveling from the crackers.
  • *pro tip* Bake the crackers on a cooling rack set in the foil-lined rimmed pan.  This helps keep the bacon and crackers crispy and does not absorb all the grease coming out of the bacon.
  • Third, bake at 350 for 25-30 minutes or until the bacon is crispy

As a matter of fact, you can pre-assemble the bacon and crackers the night before and refrigerate but do not sprinkle with brown sugar until you are ready to bake.

Meanwhile, another variation I have had is Chicken in a Biscuit Crackers wrapped in bacon and baked.  No brown sugar those are tasty as they can be too. Can you ever go wrong with anything bacon at a tailgate?
