Happy Football Friday we are now 50 days away from the kickoff of the 2021 college football season. It’s the perfect time to start collecting some tried and true tailgate recipes.  Over the next few weeks, I will share a new Football Friday Tailgate Recipe. I hope all y’all enjoy them. Let’s kick off week one with my very own Coach Kate’s Kickoff Chili.

Football Friday Tailgate Recipe: Coach Kate’s Kickoff Chili

Recipe History

This chili recipe was invented and perfected before the 2010 LSU at Vanderbilt game in Nashville, TN. I was living in Nashville at the time and I had several LSU friends come to town for the game. I took parts of several of my favorite chili recipes and made my own creation which became Coach Kate’s Kickoff Chili.

The Recipe:

Here is what you will need:

  • 1.5 pounds of stew meat
  • 1.5 pounds of ground beef
  • 2 sweet onions
  • 1 package of McCormick’s Tex Mex Chili seasoning
  • 2 cans of Rotel HOT (10 oz cans)
  • 2 cans of Rotel MILD (10 oz cans)
  • 1 big ass can of diced tomatoes (24 oz can)
  • 3 cans of Bush’s Chili Beans MEDIUM (16 oz cans)
  • 1.5 bags of frozen corn
  • 1 bottle of your favorite beer

Optional items:

  • 1 container of Sour cream
  • 1 big package of cheddar cheese

Directions:

  • Chop onion brown it with the stew meat.
  • Brown the ground beef.
  • Put all browned meat and onion in a stockpot or crockpot with the chili seasoning, beans (undrained), tomatoes (undrained), Rotel (undrained), and corn with the beer. Let the chili cook for several hours.
  • I opted for a spicier version to match the taste of my LSU friends.  You can use the less spicy versions of Rotel and chili beans.

For the best flavor have everything in the crockpot by noon for a 7 pm kickoff.  You can also make it the night before for a noon kickoff.

*Garnish with a spoonful of sour cream and a sprinkle of cheddar cheese.

The chili is usually even tastier after the game or the next day. The flavors get better and the chili gets thicker. So, be sure to take those leftovers home to enjoy while you nurse your post-game hangover.
