Football Friday Tailgate Recipes: Not Your Average Appetizer

Happy Football Friday.  Today we have Football Friday Tailgate Recipes: Not Your Average Appetizer. Did you save last week’s Hot Toddies? While working on the tailgate recipes this season I have come across some interesting treats.  These three were a little different than the average tailgate appetizer that I came across.  I hope you enjoy the tasty treats and the all games this weekend.

Football Friday Tailgate Recipes: Not Your Average Appetizer

Jalapeño Popper Wonton Cups

Ingredients: 

  • 12 wonton wrappers, *I found them in the produce section of my local grocery store
  • 4 oz. cream cheese softened
  • ½ c. sour cream
  • 12 oz. bacon, cooked & crumbled (reserve 2 tablespoons)
  • 1 c. shredded cheddar cheese, reserve 2 tablespoon
  • 3-4 jalapeños, seeded and chopped (**for more spice, do not remove all the seeds)

Instructions: 

  1. Preheat oven to 350 degrees.
  2. Spray muffin pan with cooking spray.
  3. Place one wonton wrapper in each muffin cup; bake 10 minutes or until lightly browned.
  4. Remove from oven and cool slightly.
  5. In a medium-sized mixing bowl, stir together cream cheese, sour cream, bacon, cheddar cheese, and chopped jalapeños.
  6. Spoon filling into wonton cups, then sprinkle with reserved bacon and cheese.
  7. Return to oven and bake for an additional 8-10 minutes, until wontons are golden brown and cheese is melted.

Spicy Chicken Cheeseballs

Ingredients:

  • 3 cups all-purpose baking mix Bisquick or Arrowhead Mills brands have both been tested
  • 1 pound ground chicken
  • 2 tablespoons Tapatio Salsa Picante hot sauce
  • 4 cups sharp cheddar cheese shredded
  • ½ cup milk
  • ½ teaspoon oregano
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • dash of salt and pepper

Instructions: 

  1. Preheat oven to 350 degrees. Line a baking sheet with parchment paper and set it aside.
  2. Mix together all of the ingredients in a large bowl, either by hand or with a stand mixer fitted with a paddle attachment.
  3. Once combined, form into small balls, approx 1 inch in diameter.
  4. Place on a prepared baking sheet, and bake for 20 to 25 minutes, or until golden brown with an internal temperature of 165 degrees.

More Helpful Hints:

Follow the recipe mixing the ingredients, forming the balls, and placing them on a parchment-lined (or wax paper-lined, if you aren’t baking now) baking sheet. Pop in the freezer for two hours, to flash freeze them. Remove from the freezer, toss into a freezer-safe zip-top bag, and freeze until ready to bake. When you’re ready to bake, place on a lined baking sheet, and add an additional 10 minutes to your baking time.

You can bake these ahead of time, allow them to cool completely, and freeze in a freezer-safe zip-top bag. When ready to heat and serve, place on a parchment-lined baking sheet, and into a preheated 350-degree oven. Bake for 10 to 12 minutes, or until heated through.

These are perfectly tasty when served at room temperature, but you can reheat these easily in a 350 degree preheated oven in about 6 to 8 minutes.

Simple Pretzel Dogs

Ingredients:

  • 8 raw frozen dinner rolls defrost them according to package directions
  • 8 hot dogs {all beef is our preference}
  • 1/4 cup baking soda
  • 1 egg
  • 2 tablespoons water
  • coarse salt
  • Ketchup and/or honey mustard sauce

Instructions:

  1. Defrost rolls according to package directions.
  2. Roll each dinner roll into an 18-inch rope. Wind each one around a hot dog from top to bottom.
  3. Press the dough onto itself at the top and bottom so it doesn’t unroll.
  4. Boil 3 quarts of water. Carefully pour soda into boiling water. Place 2 wrapped pretzel dogs into the water for about 30 seconds. Remove with a slotted spoon to a cooling rack. Repeat until all pretzel dogs are boiled. Place boiled pretzel dogs on a sprayed baking sheet.
  5. Combine egg and water and mix well. Brush pretzel dogs with egg wash and sprinkle with salt. Bake at 450°F 6-8 minutes or until dark golden brown. Serve with ketchup and mustard.
