Happy Football Friday we are now 36 days away from the kickoff of the 2021 college football season. It’s the perfect time to start collecting some tried and true tailgate recipes. It is week THREE of the Football Friday Tailgate Recipe. Did you save the recipe for Tailgate Crack? So tasty! It is definitely on my must-make list this season.
This week’s recipe was sent to me by Christa Williams. She married into a Florida State family. In fact, her husband Paul used to attend FSU games with his father. Furthermore, they would sit on wooden bleachers to cheer on their Seminoles. Paul and Christa have been season ticket holders since 1992. So, needless to say, Christa is a seasoned tailgater and she generously shared her tailgate staples. First up is Wayne’s Tortellini Salad.
Recipe History
Wayne was Christa’s neighbor at the time he shared this recipe. In fact, Wayne is Wayne Farro. Wayne Farro is the father of Josh and Zac Farro. Josh and Zac are founding members of the band Paramore. How cool is that? By the way, Wayne has a great pasta sauce recipe too that is my go-to recipe. I hope y’all enjoy Wayne’s Tortellini Salad.
Football Friday Tailgate Recipe: Wayne’s Tortellini Salad
The Recipe:
Here is what you will need:
- 1 pound of frozen tortellini – cooked
- 1/2 Red bell pepper
- 1/2 Green bell pepper
- 1/2 Can of black olives
- 1/2 pound of mozzarella cheese – cubed
- 3 slices of Proscuitto – chopped
- 1/2 cup parmesan
Dressing:
- 2/3 cup of balsamic vinegar
- 1/3 cup olive oil
- 1 teaspoon Italian seasoning
- 1/2 teaspoon of Lowry’s seasoned salt
- 1 tablespoon of honey
- 1/2 teaspoon of pepper
- 1 teaspoon of garlic powder
Directions:
Mix everything together. Sprinkle with more parmesan. For best taste chill before serving. Actually, this can be made the night before saving you more time on game day.
