Football Friday Tailgate Recipe: Spinach and Caramelized Onion Sliders

Happy Football Friday we have another tasty treat on deck for a full season of tailgating.  Did you save the Oreo Cheesecake Bites recipe?  This week for our Football Friday Tailgate Recipe: Spinach and Caramelized Onion Sliders.  They are the perfect little snack for tailgating.  It was sent to me by AP Boze a loyal Vanderbilt fan. Football Friday Tailgate Recipe

Spinach and Caramelized Onion Sliders

Ingredients: 

  • Two yellow onions
  • One large container of fresh spinach (or two bags of frozen spinach)
  • 24 pack of Kings Hawaiian Rolls
  • Four tablespoons of unsalted butter
  • One 16oz bag of shredded mozzarella
  • Salt, pepper, and garlic powder to taste

Directions:

  • Preheat two non-stick skillets to medium heat.
  • Thinly slice both onions.
  • Add all sliced onion to one of your skillets and turn the burner to medium-high.
  • Trim stems off of spinach.
  • Add spinach to the second skillet and turn the burner to low.
  • The caramelization of the onion and the wilting of the spinach should take about the same amount of time.
  • Once the onions are translucent and the spinach is wilted, add two tablespoons of unsalted butter to each skillet and season to taste with salt, pepper, and garlic powder.
  • After the onions have caramelized, slice the Kings Hawaiian rolls as a unit (don’t separate into individual rolls).
  • Layer spinach, onions, and all the mozzarella.
  • Place tops on sliders and bake (covered with foil) until the cheese is melted.
