Happy football Friday, Y’all. A jam-packed slate of games is coming tomorrow. Thursday had a great slate of games. The six Friday night games are an amuse-bouche or a single bite hors d’oeuvre for the weekend. So, let us do some amuse-bouche tailgate treats for the weekend. Football Friday Tasty Tailgate Treats: Just a Bite
Air Fryer Steak Bites with Garlic Butter
Ingredients:
For the Steak Bites:
- 16 oz Top Sirloin Filet*, cut into bite-size pieces
- 1/2 Tbsp (8g) Olive Oil
- 1/2 Tbsp (6g) Brown Sugar
- 1 tsp Kosher Salt
- 1 tsp Black Pepper
- 1 tsp Chili Powder
- 1/4 tsp Garlic Powder
- 1/4 tsp Onion Powder
For the Garlic Butter:
- 1 1/2 Tbsp (21g) Butter
- 1/4 tsp Garlic Powder
- 1/4 Red Pepper Flakes
- 1/4 tsp Parsley Flakes
Instructions:
- Toss the steak pieces with the olive oil. Mix the brown sugar and spices together and coat the steak in the seasoning. Set aside.
- Preheat an air fryer for 5 minutes at 400ºF. Once heated, add the steak to the basket and air fry for 4-6 minutes at 400ºF to your desired doneness.
- While the steak cooks, melt the butter and mix in the garlic powder, red pepper, and parsley. Toss the finished steak in the garlic butter before serving.
*Top sirloin filet has 5g fat per 4 oz raw. You can also use round steak (7g fat per 4 oz raw), flank steak (9g fat per 4 oz raw), or skirt steak (14g fat per 4 oz raw). Note: Thinner cuts will cook faster.
Can I make these steak bites without an air fryer?
Yep! Get a large skillet (cast iron if possible) with lots of surface area really hot before adding a little oil and the steak bites. Cook for 2-3 minutes before stirring to finish cooking, about 4-5 minutes total. A meat thermometer would come in clutch here.
Spicy Sriracha Chicken Cheeseballs
Ingredients:
- 3 cups Original Bisquick™ mix
- 1 pound ground chicken
- 2-3 tablespoons sriracha sauce
- 4 cups shredded sharp cheddar cheese
- 1/2 cup milk
- 1/2 teaspoon oregano
Instructions:
- Preheat oven to 350°F and line baking sheets with silicone baking mats or parchment paper.
- In a large bowl combine all the ingredients, using your hands or a large spatula.
- Form mixture into 1 1/2 inch – 2 inch balls and place them on the prepared baking sheet.
- Bake for 20-25 minutes, or until nice and golden brown on the outside.
Cheesy Bacon Bombs
Ingredients:
- 1 can (8ct.) Pillsbury Grands Flaky Layers Biscuits
- Cubed Mozzarella Cheese (1-1″ cube per Bomb)
- 2 lbs. of Bacon (1 slice per Bomb)
- Sticks
- Oil of your choice for frying
Directions:
- Cube up the Cheese, and cut each biscuit into fourths. Place one piece of Cheese inside a Biscuit quarter, and roll it up in there, nice and tight
- Wrap each rolled Bomb in a slice of Bacon, and secure it with a skewer or toothpick
- In a medium/large pot, heat up approx. 2″ of Oil (to 350 degrees) and fry them up in small batches. Maybe one or two at a time, the oil will expand so stay close…
- Drain them on some paper towels, but serve them up good and warm.

- Open bag
- Pour into bowl
- Optional: add peanuts
