Line 2 sheet pans with parchment paper.<\/li>\n<li>Unroll a pie crust on each prepared sheet pan. Sprinkle the crusts with the cheese and parsley, lightly pressing everything in to adhere. Bake until the edges turn golden, the cheese is bubbling, and the crust is baked through, 12 to 14 minutes. Set aside to cool.<\/li>\n<li>For the soup: Meanwhile, melt the butter in a large pot over medium heat. Add the celery, carrots, onion, and thyme. Season with the turmeric and a good pinch of salt and pepper. Stir and cook until the vegetables begin to soften, 3 to 4 minutes. Sprinkle the flour over the vegetables, and stir until combined, letting the flour cook for 1 to 2 minutes. While stirring, slowly pour in the wine and chicken broth. Add the chicken and parsley. Let the soup come to a boil and thicken slightly. Stir in the cream, and taste. Transfer it to a bowl, cover with 2 cups of water and let soak for 30 minutes. Meanwhile prepare all the vegetables.<\/div>\n<\/li>\n<li id=\"wprm-recipe-8468-step-0-1\" class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">In a large pot heat olive oil over medium-high heat. Add onions and cook until tender (takes a few minutes, some browning is okay).<\/div>\n<\/li>\n<li class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">Stir in tomato paste and let it cook for 1 minute.<\/div>\n<\/li>\n<li class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">Toss in the carrots, leeks, and celery.<\/div>\n<\/li>\n<li class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">Cook until leeks are softened, then add the garlic, potatoes and parsley.<\/div>\n<\/li>\n<li class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">Stir the vegetables a few times and cook for about a minute, until the garlic is aromatic.<\/div>\n<\/li>\n<li id=\"wprm-recipe-8468-step-0-2\" class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">Add the soaked barley along with the water, diced tomatoes and 3 cups vegetable stock.<\/div>\n<\/li>\n<li class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">Stir until evenly distributed and make sure all potatoes are submerged.<\/div>\n<\/li>\n<li class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">Bring to a boil, then lower the heat to medium and cook covered for about 40-50 minutes, until the potatoes are soft and barley tender.<\/div>\n<\/li>\n<li id=\"wprm-recipe-8468-step-0-3\" class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">Stir soup occasionally as it cooks and check to see if it\u2019s simmering.<\/div>\n<\/li>\n<li id=\"wprm-recipe-8468-step-0-4\" class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">Turn off the heat and fold in the beans. Taste to see if the soup needs more salt or pepper.<\/div>\n<\/li>\n<li class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">Add more vegetable stock if it&#8217;s to thick for your liking.
