Monterey jack cheese, grated and divided<\/li>\n<li>2 green onions, sliced<\/li>\n<li>Chili powder, for sprinkling<\/li>\n<li>1 (4-oz.) can\u00a0diced green chiles<\/li>\n<li>Tortilla chips, to serve<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<ol class=\"css-1r2vahp emevuu60\">\n<li>Preheat the oven to 350\u00b0F.<\/li>\n<li>Brush the corn cobs with vegetable oil, sprinkle with a little salt and pepper, and place on a grill pan for about 10 minutes, turning constantly. Remove the cobs from the heat to cool. Cut the kernels off the cobs once they&#8217;re cool enough to handle.<\/li>\n<li>In a large skillet over medium heat, melt the butter. Add the red onion, garlic, bell peppers, and jalape\u00f1o. Stir and cook until the veggies are soft and golden, about 5 minutes. Remove the skillet from the heat to let the veggies cool slightly.<\/li>\n<li>In the bowl of a stand mixer fitted with a paddle attachment, combine the cream cheese, mayonnaise, sour cream, and two-thirds of the Monterey jack. Mix on low speed until combined. Add the green onion, veggie mixture, corn, and green chiles, mixing on low speed until just combined.<\/li>\n<li>Spread the mixture into a baking dish and sprinkle with the remaining Monterey jack. Bake until bubbly and golden, 20 to 22 minutes. A good pop of color too!<\/li>\n<li>1\/4 cup chopped onions \u2013 for flavor.<\/li>\n<li>1\/2 tsp sage \u2013 sage, I promise, in this recipe, it works!<\/li>\n<li>salt and pepper to taste \u2013 according to your dietary needs or preference.<\/li>\n<li>1\/2 cup mozzarella cheese \u2013 pretty tasty glue!<\/li>\n<li>1\/2 cup cheddar cheese \u2013 again, two kinds of this glue help add depth of flavor!<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<ol class=\"wp-block-list\" data-slot-rendered-content=\"true\">\n<li>Preheat oven to 350 degrees.<\/li>\n<li>Cook and drain the sausage and set aside.<\/li>\n<li>Mix in a large bowl, the cream cheese, sour cream paprika, onions, sage, salt, and pepper. Mix well. Add about a half a cup of each cheese(more if you like!) and then the sausage. Mix well and pour into a 9 X 9 greased casserole dish or a 9-inch pie plate.<\/li>\n<li>Bake at 350 degrees for about 30 to 45 minutes until top is bubbly and golden brown. Top with chopped chives.
