Place a paper baking cup in each of the 80 miniature muffin cups.<\/div>\n<\/li>\n<li class=\"recipeStep\">\n<div class=\"stepIndex\">In a large bowl, beat Cupcake ingredients with an electric mixer on low speed for 30 seconds, then on medium speed for 2 minutes, scraping the bowl occasionally. Divide batter evenly among muffin cups, filling about three-fourths full.<\/div>\n<\/li>\n<li class=\"recipeStep\">\n<div class=\"stepIndex\">Bake for 10 to 12 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes; remove from pans to cooling rack.
